Audiophiles: What's the best earphone to go with a black iPod video?

Although I'm not an audiophile, I do enjoy high fidelity sound... I'm looking for earphones that will give clear and distinct highs as well as lows to enjoy my 320kbit collection of songs. I generally listen to the "easy listening" genre that covers from Jazz and piano solos to sound of nature. I prefer sound quality over visual aestheticism and also prefer that the earphones do not cost more than my iPod video ($249). Audiophiles, take your stab! Much appreciated.

First, let me make a suggesion - try to use LOSELESS compression instead of 320kbs. The difference is incredible!
Headphones - Shure in ear (i think you can get E3 for under $200); Grado, AKG.
Shure in-ear headphones are incredible! The little buggers are actually 3 way design - separate high, mid and low drivers! In your ear! E3 are very nice, but E5 are magical.

Correction: E500PTH and SE530 seem to be the latest version. E500PTH is available on the net for about $350! SE530 ~$400
